Jamaican Jerk Seasoning.

TRICNIC JAMAICAN JERK CHICKEN RECIPE

 

Ingredients:


1 whole chicken or 6 leg quarters

1/½ cup TricNic Jerk Marinade


Step 1


Cut the chicken in half or into quarters. Wash chicken with lime or vinegar about 3 times, then pat dry with paper towels. Add the chicken to a large bowl, Pour the marinade over chicken and turn to coat. Cover and refrigerate overnight. Bring the chicken to room temperature before proceeding.


Step 2 


Prepare a grill for indirect cooking. Place the marinated chicken skin-side down, over direct heat and cook until dark brown grill marks appear about 3 minutes. Turn the chicken over and cook for another 3 minutes. Move the chicken to the indirect heat part of the grill and cook, skin side up, until the skin is crisp and cooked through, 45 to 60 minutes. (Temperature 160 °F) Transfer the chicken to a platter and enjoy. 


Jerk Marinade was originally used on chicken & pork, it can be used as a jerk seasoning or jerk rub.
