Autobiography
Originally of Jamaican descent, Chef Nicholas Stennett’s fascination with cooking from a very young age was no surprise to his family. He was always in the kitchen experimenting with various seasonings and trying to prepare various dishes. At age 19, after his mother died, he began to embark on a journey to become a professional chef. He then went on to study culinary arts at ‘HEART Academy’ in Petersfield, Westmoreland Jamaica. Over the course of his studies and eventually into his professional practice. Nicholas has successfully built a noteworthy reputation as an award winning chef. Some of his integral chef apprenticeship experiences include: A La Carte Restaurant at Beaches Negril along with The Royal Decameron Resort, Runaway Bay St. Ann, which are two of the islands most prestigious resorts. Chef Nicholas is known for his wide array of palate pleasers. You are sure to enjoy his choice of bold flavours, perfect pairings, fresh ingredients, and flair always prepared passionately from the heart!
Prior to Nicholas Stennett’s arrival to Canada, he knew that there were countless opportunities available. As such, the only way to achieve this is through determination, hard work, and support from family and friends. He then immigrated to Canada in 2013 and launched Tricnic Catering. Now operating in Brampton, Ontario, Canada.
Achievements and Awards
Since he migrated to Canada in 2013, Chef Nicholas has been actively involved in many cooking competitions and has won many awards. These include: entering Master Chef Canada, won 15 gold medals and 6 trophies, placing 1st in the TD Jerk Food Festival, 1st in Grace Caribbean Cook Off, as well as 1st in Celebrity Men who cook and also 1st Chefs of the Kingdom and Jerk Wars. He was also featured in the August 2014 Toronto Star, The Jamaica Gleaner, and Canadian Toronto Newspaper.
When did your love for food begin?
My love for food began when my mother passed away in 2006. From that day, until now I haven't stopped cooking. My mother was a stay at home mom and so she would cook some fantastic food for the family.
What is your favourite dish to cook and why?
My favourite dish to cook is jerk chicken, because it is made up of 17 various herbs and spices that came directly from the island of Jamaica. It reminds me of being back home in Jamaica where I would use natural herbs and spices to create all my dishes.
What dishes are you well-known for preparing?
I am well-known for Jerk Chicken. I have come up with my own recipes that really relate to my culture and my new home Canada. This Jerk Chicken is the winner of numerous Awards such as, Jerk Festival, Jerk Wars, Celebrity Chef Men Who Cook and Chef of the Kingdom, to name a few.
What does success look like for you?
Success for me would be to open over 20 franchises’ of TricNic Jerk Centre, all over the world. With the aim of sharing my love for food and preparing various dishes that people of all cultures will enjoy.
Do you have any advice for up and coming chefs?
My advice to up and coming chefs would be to love what you are doing and continue to work hard, no matter what you are going through. There is always a light at the end of the tunnel, and it may seem hard to get to it, but you can do it and just keep working towards it. Chefs should practice at home that is what has helped me a lot in my career.
Who taught you to cook your first dish?
The first dish I ever made was self-taught because growing up in Jamaica parents allow children to cook at a young age. As a result of that I learnt on my own.
How do you incorporate yourself and your heritage into your dishes.
I incorporate myself into my dishes by preparing all my meals with fresh produce. All of these are farm grown and helps to create my signature sauces, dressings, soup, and flavours. I give my clients authentic, exceptional taste and I make “typical” Jamaican food look different on a plate than the average chef. It is said that people eat with their eyes, and Jamaican food doesn’t typically have much presentation style to it. Therefore, I present my food in a manner that is visually appealing, to match the great taste of traditional Jamaican cuisine.
